“Bilbao Berria, una experiencia culinaria para los sentidos”
Cada vez que regreso a Bilbao disfruto de cada calle, tienda, boutique, bar o restaurante como una niña. No deja de sorprenderme cada uno de los espacios nuevos que abre sus puertas entre visita y visita que hago a la ciudad que me vio crecer. Ha sido en estas navidades cuando he descubierto Bilbao Berría en la entrañable calle Ledesma. Me cuentan que abrió sus puertas en agosto del pasado año en el número 26 de la citada calle, un local que en su día fue el famoso Matxinbenta del empresario Dionisio Lasa y padre de Iñaki Lasa. Éste último junto a Rafa Viar y Pedro Antonio López son los propietarios del Grupo Bilbao Berría que por el momento regentan negocios de restauración en Barcelona, Formentera, Londres y, ahora, Bilbao.
Sinceramente es difícil que dentro del recorrido por cualquiera de los templos de la gastronomía vasca se pueda destacar. Pues Bilbao Berría lo consigue, inicialmente por su barra repleta de miniaturas gastronómicas, una extensa variedad de vinos de bodegas de todo el ámbito nacional y una decoración especial. Éstos son los factores principales que te van atrapando hasta llegar al restaurante. Es en este momento cuando el jefe de sala, José Antonio Ramos, se encarga de cada detalle para que la experiencia culinaria sea realmente grata para nuestros sentidos.
La carta está compuesta de unas entradas ‘Para picar’, los ‘Platos’ principales y ‘Los Postres’. Está inspirada en la historia de la gastronomía vasca con los sabores de su cocina tradicional y toques gourmet como lo demuestran el ‘Tarro de polvo de foie con manzana asada, Pedro Ximenez y kilos’, las ‘Kokotxas de merluza en pilpil de setas’ y el ‘Chuletón de Villagodio’. Así pues, daba comienzo la difícil elección aunque cada uno de nosotros lo teníamos bastante decidido. ‘Jamón cortado a cuchillo’, ‘Buñuelo de chistorra, maíz y melaza’ y ‘Tataki de atún, salsa de soja y sesamo’. Calidad, creatividad y buena presencia. La presentación de los panes muy original mientras esperamos la primera degustación.
Como platos principales queríamos saborear carne y pescado, por lo tanto la ‘Lubina salvaje con crema y crujiente de alcachofa’, ‘Bacalao a la plancha con pisto de hongos’ y la ‘Presa ibérica asada, salsa de cerveza y mostaza en grano’ fue nuestra apuesta. La cocina elaborada por el chef Emilio Ramírez posee una perfecta combinación de ingredientes como lo demostró en Metro Moyua, uno de los lugares más representativos de Bilbao durante más de dos décadas y que siempre quedará en nuestra memoria. Ramírez ha conseguido de esta carta un auténtico manual de creatividad.
Y para finalizar llegaron los postres. Una ‘Crema de yogurt con frutos rojos y bizcocho de pistachos’ y ‘Smoothie de mango, con grosellas y peta zetas’ que nos relatan una visual semblanza de alta repostería.
La bodega contiene referencias de diversas denominaciones de origen. Bilbao Berría dispone de una carta con una selección muy cuidada para ofrecer a los clientes los mejores vinos de productores españoles y del resto del mundo para que sean acordes con los gustos de los comensales y todos ellos con una relación calidad precio muy óptima.
